I am so sorry that it took me so long to respond. Two more people have moved in with us and I am meeting myself coming and going. Here is a recipe called: Extra Good Potato Soup
3 potatoes, peeled 1 1/2 teaspoons salt 1 quart milk 1/4 teaspoon celery salt 3 slices onion 1/8 teaspoon pepper 3 tablespoons butter Few grains of cayenne pepper 2 tablespoons all-purpose flour 1 teaspoon chopped parsley
Cook the potatoes in salted water. When soft, rub through a strainer. There should be 2 1/2 cups. Scald the milk with onion, remove the onion and slowly whisk the milk into the potatoes. Melt half of the butter and add the flour, salt, celery salt, pepper, and cayenne. Stir until well mixed, then stir into the hot soup. Boil 1 minute, strain, and add the remaining butter. Sprinkle with parsley. Serves 4 to 6.
